10. Middle Eastern Rice Salad
Take a large non-stick skillet and add 2 tablespoons of olive oil to heat it over medium heat. After that, you have to add thinly sliced sweet onion into the skillet and allow it to cook. You have to stir the onions for 5 minutes and remove it from heat when the onion turns into brown color. Add 1 can of chickpeas that are rinsed and drained into the skillet. After that, you have to add ½ teaspoon of ground cumin and ¼ teaspoon of salt into it. Season it with freshly ground black pepper for taste. Take a large bowl to combine brown rice, dates, onion-chickpea mixture, parsley and mint. You have to toss it will and serve warm.
